Ruby is Callebaut's latest chocolate creation, specially developed for professional chocolatiers and confectioners. It is characterised by an intense fruity flavour and fresh acidity. It is completely natural, with no artificial colours or flavours.
Ruby chocolate was discovered by chance by the Callebaut cocoa researchers. It is made from ruby cocoa beans that grow in classic cocoa regions such as Brazil, Ecuador and the Ivory Coast. The special properties of these beans give the chocolate its unique colour and taste.
The cocoa content is at least 47.3% and the milk content is at least 26.4%.

What does that mean exactly? The cocoa and chocolate products can be traced back to the cocoa farmer cooperatives! The Cocoa Horizons program promotes the living conditions of cocoa farmers by creating self-sufficient communities that protect nature and children.
