You also need: 100g butter (cold), 10g egg yolk, 60-70ml milk
Knead the baking mix into a dough by adding butter, milk and egg yolk and place in the fridge for about 30 minutes. Preheat the oven to 180°C top/bottom heat. Then roll out the chilled dough with a rolling pin to 4mm and emboss patterns into it with a speculoos roller or a rolling pin. For optimal results, the shortcrust pastry must be really cold and firm. Then use the wavy side of the dough cutter to cut the dough sheet into pieces of any size and place them on the baking tray lined with baking paper. Then put the baking tray in the preheated oven and bake the speculatius at 180°C top/bottom heat for about 10-15 minutes.
