CMC sugarcel is used as a Thickener and stabilizer. As an additive for roll icing CMC ensures a better binding in order to create filigree ornaments. In order to make a fondant glue: add 10g CMC to 30g sugar, mix the mass 250ml boiling water and let it cool down.
